My kitchen story began in 2020—an infamous year—while renovating a beach house in Rincón, Puerto Rico. New York was cold, closed, and expensive, so a $50 United flight to Aguadilla felt like an invitation to try something completely new. That flight started an adventure shaped by a new language, culture, and the food that came with them—and sparked my love of hospitality from the table. Taco Tuesday is where I share the tacos and weeknight plates worth making: no algorithms, just honest cooking.

These Crockpot Crispy Chicken Tinga Tacos do most of the heavy lifting while you’re busy doing literally anything else. Smoky chipotle chicken cooks low and slow, then gets tucked into corn tortillas with two kinds of cheese and baked until the edges go crispy.
