Creamy Crock Pot Chicken Enchiladas

What You'll Need
For The Chicken + Sauce
1 1/2 lb thin-cut chicken breasts
1 taco seasoning packet, for seasoning the chicken
3 tbsp butter
3 tbsp all-purpose flour
1 cup chicken broth
3/4 cup salsa verde or green enchilada sauce
1/2 cup sour cream
1 cup milk
1 tsp seasoning blend (Jade's caption calls this “the blend”)
1/2 tsp cumin
1 tsp onion powder
1 small can diced green chiles
Flour or white corn tortillas, cut into strips
Monterey Jack cheese, shredded
For Topping — Optional
Jalapeños
Sour cream
Hot sauce
Shredded cheese
Tortilla chips
Step By Step
1️⃣ Start The Sauce
Add the butter and flour and whisk until smooth with no lumps.
2️⃣ Make It Creamy
Slowly whisk in the chicken broth and cook until the mixture begins to thicken. Add the milk and salsa verde and whisk until combined. Add the sour cream and whisk again until smooth.
3️⃣ Season And Add The Chicken
Season the sauce with the seasoning blend, cumin, and onion powder. Season the chicken with taco seasoning, then add it to the crock pot. Top with the diced green chiles.
4️⃣ Let The Crock Pot Work
Cover and cook on low for 4 hours. Jade uses thin-cut chicken breasts; thicker pieces will need additional cooking time. Cook chicken to a safe internal temperature of 165°F.
5️⃣ Shred It
Shred the cooked chicken directly into that creamy green chile sauce.
6️⃣ Enchilada Time
Add tortilla strips and top generously with shredded Monterey Jack.
7️⃣ Melt And Serve
Cover and let the cheese melt for about 20 minutes. Finish with jalapeños, sour cream, hot sauce, extra cheese, crushed tortilla chips—or all of the above.
