🌮 Fun Fact: This is basically enchilada night with the assembly line removed. Same cheesy, saucy comfort. Way less Sunday-night labor.

What You’ll Need

  1. 1–2 tsp olive oil

  2. 1 lb ground beef

  3. 1 tbsp taco seasoning

  4. 1/4 cup water

  5. 1 large burrito-size tortilla, or 3–4 smaller tortillas

  6. 12–15 oz red enchilada sauce

  7. 2 cups freshly shredded mozzarella or cheddar cheese

  8. Sour cream, cilantro, sliced green onion, avocado, or radish, for serving

  1. Make It A Sunday Spread: Set out chips, guac, a crunchy slaw, and all the toppings. Suddenly a 20-minute skillet feels like dinner for the whole table.

Step By Step

1️⃣ Get The Beef Going
  1. Heat the oven to 400°F. Warm the olive oil in a large oven-safe skillet over medium-high heat. Add the beef, break it up, and cook until browned and cooked through, about 6–7 minutes. Drain excess fat if needed.

2️⃣ Bring The Flavor
  1. Stir in the taco seasoning and 1/4 cup water. Toss everything together until the beef is evenly coated and the spices have had a minute to wake up.

3️⃣ Layer It Up
  1. Lay the tortilla over the seasoned beef. If you’re using smaller tortillas, overlap them to cover the skillet. Pour the enchilada sauce over the top.

4️⃣ Cheese. Obviously.
  1. Cover the whole thing with shredded cheese. Bake uncovered for 10–15 minutes, until the sauce is bubbling and the cheese is melted with golden spots.

5️⃣ Finish Strong
  1. Want more color on top? Give it about a minute under the broiler. Then bring the skillet straight to the table and finish with sour cream, cilantro, green onion, avocado, radish—or let everybody choose their own adventure.

The Thursday Move: Double the recipe and use a 9×13-inch baking dish when the whole crew is coming over. Same cozy payoff, more forks at the table.
