It’s Breakfast Time

🌮🔥 Happy Sunday, Fam!

Burrito Week has been one glorious tortilla-wrapped fever dream.

We kicked things off with a crispy golden beauty packed with smoky beef, sweet heat, melty cheese, and tangy crema. Strong opening. Very saucy behavior.

Then came the Caesar Salad Pepperoni Pizza Burrito, a cheesy, crunchy, salad-meets-pizza plot twist that completely scrambled our taste buds.

Today, breakfast enters the chat.

Crispy potatoes, smoky bacon, fluffy eggs, creamy beans, melty cheese, avocado, and chipotle crema all roll into one golden breakfast burrito with serious morning swagger. 🌯🍳🔥

🌯 Fun Fact: Breakfast burritos first gained fame in New Mexico during the 1970s, wrapping eggs, potatoes, cheese, and chiles into the ultimate grab-and-go morning masterpiece.

What You’ll Need 🌶️✨

The Burrito:
Large flour tortillas
Scrambled eggs
Crispy seasoned fries
Sharp cheddar cheese - shredded
Refried beans
Avocado (or fresh guacamole)
Bacon
Chipotle Crema (recipe below)
Hot sauce (or favorite salsa - on the side)

Chipotle Crema:
1/2 cup plain greek yogurt (or sour cream)
1-2 chipotle pepers in adobo
1 tbsp adobo sauce
1/2 lime - juiced
1 garlic clove
Pinch of salt

🔥 Step By Step

1️⃣ Crisp the fries
Bake or air fry the fries until deeply golden and crunchy, then hit them with flaky salt while they’re still hot. Breakfast potatoes just joined the burrito business. 🍟🔥

2️⃣ Bring home the bacon
Cook the bacon until crisp, then transfer it to a paper towel-lined plate. Try not to snack away half the batch before assembly. We see you.

3️⃣ Scramble low and slow
Whisk the eggs with salt and pepper. Cook over medium-low heat, stirring gently, until soft and just set. No rubbery eggs invited to this fiesta.

4️⃣ Warm the beans
Heat the refried beans in a small pot until smooth and steamy. Keep them warm while the rest of the breakfast crew gets ready.

5️⃣ Mix the crema
Whisk together the chipotle crema, then chill until serving. Smoky, creamy, and ready to drizzle with zero restraint.

6️⃣ Build the burritos
Warm the tortillas until soft and flexible. Layer on the refried beans, cheese, scrambled eggs, crispy fries, bacon, avocado or guacamole, and a generous drizzle of chipotle crema.

7️⃣ Roll it tight
Fold in the sides, roll everything up snugly, and place each burrito seam-side down in a hot skillet.

8️⃣ Toast to golden glory
Cook for 2 to 3 minutes per side until the tortilla is crisp, golden, and holding all that breakfast magic together.

9️⃣ Slice, dip & devour
Slice the burritos and serve with extra chipotle crema, guacamole, and hot sauce. Cheers to slow mornings and breakfast burritos that absolutely understood the assignment. 🌯💛🔥
