Weeknight Chicken Enchiladas

Did you know?!? Spanish-era Tex-Mex chefs in early 1900s America re-imagined Mexico’s chili-smothered tortillas, turning enchiladas into diner staples and igniting a love-affair with saucy comfort food nationwide.

🥵 What You’ll Need
4 cups coarsely shredded rotisserie chicken
1 (15-ounce) can black beans, drained and rinsed
½ cup chopped fresh cilantro leaves
2 cups shredded Mexican blend cheese, divided
8 8-inch flour tortillas, warmed

FOR THE ENCHILADA SAUCE
1 tablespoon canola oil
1 medium sweet onion, diced
1 small poblano pepper, diced
4 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 cup chicken stock
1 (15-ounce) can tomato sauce

🌮 How to Make the Magic

🔥 Step 1: Prep the Scene
Preheat that oven to 375°F. Oil up a 9x13 baking dish — we’re setting the stage for melty perfection.

🌮 Step 2: Mix the Good Stuff
In a big bowl, toss together shredded chicken, black beans, cilantro, and a splash of enchilada sauce. Sprinkle in some cheese love — about ¾ cup.

🥄 Step 3: Roll It Up
Spoon that mixture into warm tortillas, roll ‘em tight, and line them up seam-side down like little taco soldiers.

🧀 Step 4: Sauce + Cheese, Baby
Pour the rest of your enchilada sauce over the top and rain down that remaining cheese.

In a hot skillet, sauté onion + poblano till soft. Stir in garlic, chili powder, cumin, paprika, and oregano till fragrant (aka your kitchen smells like heaven).

Whisk in chicken stock + tomato sauce, simmer till thickened — 5ish minutes — and boom: homemade flavor bomb achieved.
