Okay but WHY is winter acting like it has something to prove this year?! The cold rolled in swinging, so we sent the Taco Tuesday squad deep into the internet wilderness hunting down the ultimate taco-fueled comfort food.
Good newsโฆ we absolutely understood the assignment. Todayโs drop is a taco-inspired lasagna thatโs warm, cheesy, a little ridiculous, and exactly what this weather demands.

What Youโll Need ๐ถ๏ธโจ
2 tablespoons vegetable oil, plus more for greasing
2 pounds ground beef
1 medium yellow onion, chopped (plus more for serving)
4 garlic cloves, chopped
1 green bell pepper, seeds and ribs removed, chopped
1 (15-ounce) can black beans, drained
1 (15-ounce) jar medium salsa (about 1 1/2 cups)
2 tablespoons taco seasoning
1 tablespoon ground cumin
1 tablespoon chili powder
1/2 teaspoon kosher salt, plus more to taste
8 (8-inch) flour tortillas, cut in half
2 tomatoes, chopped
8 ounces sharp cheddar cheese, shredded
8 ounces pepper jack cheese, shredded
Toppings: Sour cream, cilantro, green onions or chives, guacamole, sliced jalapeรฑos, pico de gallo
How To Make The Magic ๐ฅ
1๏ธโฃ Heat things up
Preheat the oven to 400ยฐF and grease a 9ร13 baking dish. Weโre building comfort in layers today.
2๏ธโฃ Cook the taco filling
Brown the beef, drain the extras, then sautรฉ onion, garlic, and bell pepper. Stir in beans, salsa, taco spices, and let everything get cozy and unified.
3๏ธโฃ Stack the goodness
Layer tortillas, beefy taco mix, tomatoes, and cheese. Then do it again. More layers = more applause later.
4๏ธโฃ Melt to perfection
Cover and bake 10 minutes, uncover and bake 10 more until the cheese is bubbly, melty, and living its best life.
5๏ธโฃ Finish like a champion
Rest 10 minutes, slice clean, then pile on sour cream, cilantro, green onions, guac, jalapeรฑos, and pico.
