Weeknight Chicken Al Pastor Tacos

🔥Fun Fact: Tacos al pastor were inspired by Lebanese shawarma brought to Mexico, swapping lamb for pork, adding pineapple, and creating one of the world’s most iconic street foods. 🌮

What You’ll Need 🌶️✨
TOMATILLO SALSA
½ of 1 White Onion, small diced
1 whole Poblano, small diced
5-6 whole Tomatillos, medium chopped
5 cloves garlic, minced
¾-1tsp salt
3Tbsp water
AL PASTOR MARINADE
1/4c pineapple, diced
2 fruits worth orange juice
1 ¾ Tbsp water
1 3/4Tbsp white vinegar
1 2/3Tbsp sugar
1 heaping Tbsp salt
2-3Tbsp achiote annatto paste (or sub in lime juice, chile powder, & paprika)
2tsp dried oregano
3.5tsp garlic powder
3tsp cumin
4tsp chile powder
FINISHING/GARNISH
Corn tortillas, heated
Oil
Chopped cilantro
White onion, small diced
Queso fresco (or feta)
How To Make The Magic 🔥
1️⃣ Simmer the salsa magic
Onion, poblano, tomatillos, garlic, salt, and water hit the saucepan. Simmer, soften, then cook uncovered until thick and vibey. Chill it down.
2️⃣ Marinate the main event
Coat juicy chicken thighs with half the marinade. Line them up on a foil tray with fresh pineapple planks riding shotgun. Flavor incoming.
3️⃣ Bring the broiler drama
Broil hot and fast. Char one side, flip, char again. You want smoky edges, caramelized pineapple, and serious taco energy.
4️⃣ Chop and sizzle
Dice chicken and pineapple. Hit a hot pan with oil, crisp the edges, splash in reserved marinade, and sauté until glossy and irresistible.
5️⃣ Build the taco moment
Double corn tortillas, pile on the chicken, cilantro, white onion, tomatillo salsa, and queso fresco. Serve hot. Applause encouraged. 🌮✨
