Another Thanksgiving in the books — complete with chaotic cousins, political hot takes, and that one uncle who refuses to use his inside voice.
Today? We’re reclaiming the couch, the remote, and the snacks. The Sunday-after is all about horizontal living and cheesy comfort, so we whipped up the easiest, ooey-gooey Queso Fundido to keep you fueled through every kickoff and nap.

🌮🔥 Super Easy Queso Fundido

Fun Fact: Queso Fundido started in Northern Mexico as a campfire dish—ranchers melted cheese in cast-iron pans and scooped it with tortillas straight from the fire.
🌶️ What You’ll Need
1lbs spicy chorizo
12oz Oaxaca queso
1tsp maldon salt
2 jalapeños charred
🔥 How To Make The Magic
1️⃣ Grab about 1 lb of chorizo and pop it out of the casings. (Weird? Yes. Worth it? Absolutely.)
2️⃣ Heat a cast-iron or any skillet until it’s screaming hot — like “don’t even look at it funny” hot.
3️⃣ Toss in the chorizo and let it sizzle, crisp, and caramelize on every side. Brown = flavor, fam.
4️⃣ Hand-shred that Oaxaca cheese right over the top. We go 70/30 cheese-to-chorizo, but follow your queso destiny.
5️⃣ Slide the whole pan into a 400° oven for 10–15 minutes until it’s bubbling, browning, and becoming ooey-gooey magic.
6️⃣ Top with charred jalapeños + flaky sea salt, then crush with your fave tortilla chips.
