Spicetacular Beef Enchilada Taco Boats

Just because it’s a holiday week doesn’t mean we’re slowing down our Internet sleuthing for the perfect taco. This week, we uncovered a taco creation so good it deserves its own fireworks show.

 Taco Boats—yes, they’re real—loaded with spicy beef enchilada filling that’ll set off taste bud fireworks at your celebration.

They’re quick, easy, and the perfect handheld feast for backyard BBQs, pool parties, or watching the sky light up.

Beef Enchilada Taco Boats

Recipe By: The Seaside Baker 
(Serves 8, double Up for a big party)

INGREDIENTS
1 pound ground beef
1 onion diced
2 cloves garlic minced
2 teaspoons oil
1 teaspoon salt
1 teaspoon ground pepper
½ cup red enchilada sauce
1 package Old El Paso Stand 'N Stuff Soft Flour Tacos
2 cups shredded cheese Cheddar and Monterey jack
1 cup black olives sliced
½ cup green onions finely sliced

Toppings
Shredded Lettuce
Salsa
Sour Cream
Hot Sauce

INSTRUCTIONS
PREHEAT oven to 400 degrees.

HEAT medium sized skilled with oil on medium high.

DICE onions and garlic and sauté until soft.

ADD ground beef, salt, and pepper and cook until meat has browned, stirring regularly.

COOK meat, drain off excess fat.

MIX in enchilada sauce and cook until sauce is simmering.

PLACE Old El Paso Stan 'N Stuff Soft Flour Tacos on a cookie sheet.

STUFF about ⅓ cup of filling to each taco boat.

TOP with cheese, olives, and green onions.

BAKE for 10 minutes or until cheese has melted and taco boat edges are slightly brown.

SPRINKLE with shredded lettuce, salsa, hot sauce, and sour cream right before serving.
