Roasted Veggies Tacos

🌶️ What You’ll Need

Your Veggies
1 small head cauliflower, cut into florets⁠
1 large sweet potato, diced ½-inch cubes⁠
1 Tbsp olive oil⁠
1 tsp each: chili powder, ground cumin, & smoked paprika⁠
½ tsp each: garlic powder & dried oregano⁠
14 oz drained black beans⁠
1 lime, juiced⁠
S&P⁠

Cashew Crema
½ C roasted unsalted cashews⁠
1 chipotle pepper⁠
1 clove garlic⁠
½ tsp each: chili powder, smoked paprika, & ground cumin⁠
½ C water⁠
1 lime, juiced⁠

🔥 How To Make The Magic

1️⃣ ROAST & GET TOASTY
Toss cauliflower + sweet potato with olive oil, chili powder, cumin, smoked paprika, garlic powder, oregano, S&P. Spread out on a baking sheet and roast at 425°F for 30 mins. Last 5 mins, throw in the black beans. Out of the oven, hit it with fresh lime. Boom.

2️⃣ CREMA & THE FIXINGS
Drop all the cashew crema ingredients into a high-speed blender and let it rip until silky smooth. Char your tortillas. Smash avocado with lime + salt like you mean it.

3️⃣ ASSEMBLE & DEVOUR
Load up those tortillas with roasted veggies, black beans, creamy avo, and a heavy drizzle of cashew crema. Fold, bite, repeat. 🌶️

🔥 Optional move: extra lime squeeze + hot sauce if you’re feeling bold.
