We couldn’t wait ‘til Tuesday to drop this one—because, honestly, it’s that good. Meet your new homemade dinner hero: the Taco Tortellini Skillet. It’s got all the comfort food vibes, all the flavor, and only one pan to wash.
Cheesy, creamy, and unapologetically taco-fied—this is the kind of dish that makes Sundays (and Mondays, and Tuesdays…) worth celebrating.

One Skillet Taco Tortellini 🌮
Recipe By: @cookerofdeliciousness
Fun Fact: Tortellini hails from Italy’s Emilia-Romagna region, inspired by Venus’s belly button (no joke). Today, it’s collabing with tacos for the ultimate international comfort-food mashup. 🇮🇹🌮✨
Because sometimes the week needs a little queso-powered comfort.
This one’s got everything we love — bold flavor, minimal dishes, and a creamy finish that’ll make you do the happy dance.
Here’s what you’ll need:
1 lb ground beef (the MVP of the skillet)
24 oz fresh tortellini (tiny pasta tacos, basically)
2 taco seasoning packets (we love the Cholula brand 🌶️)
1¾ cups beef broth
2 tbsp sour cream
16 oz queso (the gooey gold standard)
How to make the magic:
1️⃣ Brown that beef — let it get nice and sizzled.
2️⃣ Sprinkle in taco seasoning, pour in broth + tortellini, and let it all simmer till those little pasta pockets are plump and happy (about 10 min).
3️⃣ Stir in sour cream + queso till smooth, creamy, and downright dreamy.
Pro tip: Add one 10 oz can of Rotel Fire-roasted Diced Tomatoes w/ Chilis!
✨ That’s it. One pan. Zero stress. Pure flavor fiesta.
Serve it up with chips, hot sauce, and maybe a margarita (chef’s orders). 🍹🌶️
