Austin, TX isn’t just the music capital—it might be the taco capital too! And if you’ve strolled those streets, you’ve probably run into the local legend: Tacos Migas.

Picture this: crispy tortilla strips, scrambled eggs, smoky chorizo, and alllll the toppings you can pile on. Breakfast taco? More like flavor fiesta. 🌶️🍳🌮

Austin Style Breakfast Tacos 🌮

INGREDIENTS
Handful of tortilla chips
3 eggs
White onion, diced
Pepper jack cheese, grated
Flour tortillas
Olive oil
Kosher salt

INSTRUCTIONS
Beat 3 eggs and grate in a small handful of cheese. Season eggs with a pinch of salt and set aside. Heat oil over medium-low and sauté a few tablespoons of onion until slightly softened. Add tortilla chips to pan and toss together.

Pour in eggs, and slowly pull in the edges as curdles begin to form. Cook until set to your liking and remove from heat.

Place flour tortilla directly on a preheated griddle or pan and top with another small handful of cheese. Top with egg mixture and remove from heat. For toppings, I like to add avocado, a squeeze of lime and some salsa. You can use whatever you have on hand though or just eat as is.

Another thing I picked up in Austin was that it’s common to individually wrap tacos in foil. Kind of has a similar effect of wrapping up a breakfast sandwich. Everything steams together and stays nice and warm.
