We’re flipping the script and turning breakfast into a full-on fiesta 🌞🌯 These ain’t your average burritos — we’re talking made-from-scratch tortillas, golden home fries, spicy sausage, and fluffy eggs all rolled up in pure magic.

Deluxe Breakfast Burritos

🌯 Fun Fact: The word burrito means “little donkey” in Spanish—named because the rolled tortilla resembles the packs donkeys once carried! 🐴

🌶️ What You’ll Need

🌾 For the Flour Tortillas

🥣 4 scant cups all-purpose flour (about 22.5g / 0.8oz each)
🧂 1 ½ tbsp kosher salt
🐷 7 tbsp pork lard or shortening (100g / 3.5oz)
💧 1 ¼ cup lukewarm water (295ml / 10 fl oz)

🥔 For the Home Fries

🥔 1 lb Yukon Gold potatoes, diced into ½-inch pieces
🧪 ¼ tsp baking soda
🧂 Kosher salt, to taste
🥄 ½ cup vegetable oil (120ml / 4 fl oz)
🌶️ ½ tsp hot paprika
🧄 ½ tsp garlic powder
🔥 ¼ tsp smoked paprika
🐔 ¼ tsp chicken bouillon powder

🌭 For the Sausage

🥄 1 tbsp neutral oil (15ml / 0.5 fl oz)
🌶️ ½ lb hot Italian sausage (225g / 0.5 lb)
🌈 ¼ red bell pepper, chopped (~30g / 1oz)
💚 ¼ green bell pepper, chopped (~30g / 1oz)
🧅 ¼ red onion, chopped (~30g / 1oz)

🌶️ For the Chipotle Sauce

🥣 ¼ cup sour cream (60g / 2.1oz)
🍶 2 tbsp mayonnaise (30g / 1oz)
🔥 2 chipotles in adobo, chopped + 1 tbsp adobo sauce (~30g / 1oz)
🍋 ½ lime, zested + juiced (~20g / 0.7oz)
🧄 ¼ tsp garlic powder
🍬 ¼ tsp sugar

🍳 For the Scrambled Eggs

🧈 2 tbsp butter (30g / 1oz)
🥚 8 large eggs
🐔 ½ tsp powdered chicken bouillon (1.5g / 0.05oz)

🌯 For Serving

🧀 Cheddar cheese, grated
🥑 Avocado, sliced
🌿 Fresh cilantro, chopped
🧅 Scallions, chopped
🍈 Lime wedges for that final squeeze

💡 Pro Tip: Double the sauce. You’ll thank us when you’re dunking those crispy burrito ends later.

🔥 How To Make The Magic


🌾 For the Tortillas

🥣 In a large bowl, mix flour, salt, and lard. Rub with your hands until crumbly.
💧 Add warm water gradually until a soft, slightly sticky dough forms.
🤲 Knead for 5 minutes until smooth, then divide into 4 balls. Flatten, cover, and let rest 30 min.
🔥 Roll each ball into a 12–13” tortilla. Cook on a hot skillet 1 min per side until puffed and golden.
Keep warm in a resealable bag.

🥔 For the Home Fries

🫕 Boil potatoes with baking soda + salt for 6–8 min until tender. Drain.
💨 Return to heat briefly to dry and rough up the edges.
🥄 In a skillet, heat oil and fry potatoes 5–7 min until golden and crisp.
🌶 Toss with paprika, garlic powder, smoked paprika, and bouillon. Set aside.

🌭 For the Sausage

🔥 Heat oil in a skillet. Cook sausage 5–7 min, breaking it up as it browns.
🌈 Remove and set aside on paper towels. In the same pan, sauté peppers + onions 4–5 min until soft.

🌶️ For the Chipotle Sauce

🌀 In a bowl, whisk sour cream, mayo, chipotle, lime juice + zest, garlic powder, and sugar.
❄️ Chill until ready to serve.

🍳 For the Scrambled Eggs

🧈 Melt half the butter on medium-low heat. Add eggs and stir constantly.
😋 When 80% set, remove from heat. Add bouillon + remaining butter and fold until creamy and custardy.

🌯 For Assembly

🫓 Lay out a tortilla. Layer eggs, cheese, avocado, sausage, and home fries in the center.
🤏 Fold the sides in and roll tightly.
🔥 Toast on a skillet, seam-side down, 1–2 min per side until golden and crisp.
🍋 Slice in half and serve with chipotle sauce, cilantro, scallions, and lime wedges.

Pro Tip: Wrap one in foil and stash it in your bag. It’s basically happiness to-go.
