It all starts with the Shishito Pepper Chimichurri — part marinade, part flavor explosion, and your new secret weapon for anything that hits the grill. But today? We’re letting it shine on carne asada crispy tacos that’ll make Sunday football halftime taste like heaven.

Shishito Pepper Chimichurri Carne Asado Tacos

🥵 What You’ll Need
🌶 Shishito Pepper Chimichurri

  • 6 oz shishito peppers (about 2 cups), roasted or blistered

  • 3 garlic cloves, smashed

  • 1 cup flat-leaf parsley, finely chopped

  • 2 tbsp fresh oregano (or 1 tbsp dried)

  • Zest + juice of 1 lemon

  • 2 tbsp red wine vinegar

  • ½–1 tsp chili flakes or Aleppo pepper

  • ½ cup olive oil (plus more for roasting)

  • Kosher salt + cracked black pepper to taste

🥩 Carne Asada Tacos

  • 2 lbs skirt steak

  • 6 garlic cloves

  • Juice of 1 orange + 2 limes

  • ¼ cup soy sauce

  • A few dashes of Maggi seasoning

  • ½ cup sliced onion

  • 1 sliced jalapeño

  • 1 bunch cilantro

  • 2 tsp each: chili powder, smoked paprika, oregano, cumin

  • 2 tsp kosher salt + 1 tsp black pepper

  • ¼ cup avocado oil

  • 6” flour tortillas

  • 12 oz Mexican blend cheese

🌮 How to Make the Magic

1️⃣ Roast those peppers
Blister the shishitos till smoky and fragrant. Toss them with all chimichurri ingredients, and let them mingle at room temp for 15 minutes—trust the process.

2️⃣ Marinate like you mean it
Blend up garlic, citrus juices, soy sauce, jalapeño, onion, and all your spices till smooth. Pour over steak and chill for a few hours (the longer the soak, the bigger the flavor bomb 💣).

3️⃣ Fire it up
Grill carne asada over high heat, 2–3 minutes per side, for that charred edge magic. Let it rest, then slice against the grain.

4️⃣ Build your taco empire
Toss a tortilla on a hot, oiled griddle → load it up with cheese → pile on that steak → drizzle with chimichurri → fold and crisp each side till golden.

5️⃣ Finish strong
Top with extra chimichurri, maybe a little squeeze of lime, and dive in. 🔥
