Corned Beef Hash Breakfast Burrito

🌮✨ Fun Fact: The breakfast burrito took off in 1970s New Mexico, blending Mexican burrito traditions with American diner eggs, potatoes, and meat for early-morning fuel.
🌶️ What You’ll Need
2 russet potatoes
1 tablespoon butter
1 tablespoon neutral oil
1 yellow onion, diced
1 pound cooked corned beef, cut in 1/2 inch dice
1/2 tablespoon each granulated garlic, onion powder, oregano and dried thyme
1 tablespoon Worcestershire
Kosher salt & coarse ground black pepper
1.5 cups shredded mozzarella, really any shredded cheese would work here
1/4 cup grainy mustard
2 large or 4 smaller flour tortillas
Eggs, 1 for each burrito
🔥 How To Make The Magic
1️⃣ Tame the taters
Peel those spuds, dice to about ½-inch cubes, then drop them into boiling water for 5 minutes just to soften. Drain and stand proud.
2️⃣ Butter meets heat
Melt butter with a splash of oil in a big pan. Add potatoes + onion, toss to coat, then let them chill undisturbed for 5 minutes. No poking. We want that crust.
3️⃣ Bring in the beef
Add corned beef, garlic, onion powder, oregano, thyme, another drizzle of oil, and Worcestershire. Mix it like you mean it.
4️⃣ Crust is king
Flatten the hash slightly with a spatula. Let it sit, sizzle, and brown. Flip. Repeat. Do this dance a few times until golden, crispy, and glorious.
5️⃣ Cheese it up
Stir in the cheese until melty and irresistible.
6️⃣ Eggs your way
Fry ‘em or scramble ‘em. You’re the boss.
7️⃣ Tortilla time
Warm tortillas. Spread mustard down the middle (2 tbsp for big tortillas, 1 tbsp for the little guys). Add corned beef hash, top with egg, roll it tight.
8️⃣ Devour immediately
