Guajillo Braised Chuck Roast w/ Butternut Enchilada Sauce

INGREDIENTS
1LB Chuck Roast
1 tbsp neutral oil or BaconUp fat
Salt
6 to 8 corn or flour tortillas
½ cup Oaxaca cheese
Butternut Enchilada Sauce
1 C roasted butternut
1 Guajillo reconstituted
1 tbsp chipotle powder
1 tsp cumin
1/2 yellow onion cooked
4 cloves garlic cooked
2 tbsp tomato paste
2C beef stock
Salt to taste
Remaining roasted cubes of the butternut
INSTRUCTIONS
SEAR the salted chuck roast in a hot iron skillet on each side in a neutral oil, remove, place in to your Instant Pot.
ROAST the peeled, cubed butternut squash
COOK the chopped onions, garlic, and when soft add tomato paste, chipotle powder, cumin, and beef stock. Simmer for 3 to 5 minutes
ADD one Guajillo (seeded & destemmed) chili to the stock and onion mixture on top of the seared chuck roast into the Instant Pot. Cook under high pressure for 1 hour then remove chuck roast.
BLEND all the cooking liquid and onions with roasted butternut squash. Remember to save some butternut squash cubes to add to the sauce after blending.
SHRED the chuck roast and stuff your tortillas, rolled up into a baking dish.
TOP with enchilada sauce and grated Oaxaca cheese.
BAKE for 15 mins until the cheese is melty.
SERVE with your favorite toppings!
