Breakfast Enchiladas With Sausage Gravy

🌮 Fun Fact: Enchiladas are traditionally made with corn tortillas and chile sauce. This griddle-built breakfast version takes the roll-and-cover idea in a decidedly American diner direction.

What You’ll Need

For The Breakfast Enchiladas
2 medium potatoes, diced
Traeger BBQ rub, to taste
1 package bacon, chopped
1 package mild chorizo
3 to 4 large eggs
1 package flour tortillas
Cooking oil, as needed
Shredded melting cheese, as needed

For The Sausage Gravy
1/2 roll hot breakfast sausage
2 tbsp butter
1 tbsp all-purpose flour, plus more as needed
1 to 1 1/2 cups milk
Cajun seasoning, to taste
Salt, pepper, and garlic seasoning, to taste

Step By Step

1️⃣ Crisp The Potatoes
Heat a lightly oiled griddle over medium-high heat. Add the diced potatoes, season with BBQ rub, and cook until browned outside and tender in the center.

2️⃣ Cook The Bacon
Add the chopped bacon to the griddle and cook until crisp. Transfer it to a tray or cooler side of the griddle.

3️⃣ Brown The Chorizo
Cook the chorizo, breaking it into small pieces, until browned and fully cooked.

4️⃣ Scramble The Eggs
Crack the eggs onto the griddle, season lightly, and scramble until just set.

5️⃣ Build The Filling
Combine the potatoes, bacon, chorizo, and eggs. Divide the mixture among the flour tortillas and add shredded cheese.

6️⃣ Roll Them Up
Fold in the sides of each tortilla, roll tightly, and arrange the enchiladas seam-side down on the griddle or in a heat-safe pan.

7️⃣ Make The Gravy
Brown the breakfast sausage. Add the butter, then stir in the flour and cook briefly until the raw flour smell disappears.

8️⃣ Finish The Sauce
Slowly pour in 1 cup of milk while stirring. Let the gravy simmer until thickened, adding more milk or flour as needed. Season with Cajun seasoning and the salt, pepper, and garlic blend.

9️⃣ Bring It Together
Spoon the sausage gravy generously over the rolled tortillas and scatter more cheese across the top.

🔟 Melt And Serve
Cover or close the grill until the cheese melts and the enchiladas are hot throughout. Serve immediately with extra gravy—because restraint has already left the building.
