Bourbon ‘Brisket’ Jackfruit Tacos

What You’ll Need 🌶️✨
2 cans tinned jackfruit (drained)
2 tbsp BBQ seasoning
1 tbsp olive oil
⅓ cup + 1 tablespoon bourbon
8¼ cup + 1 tablespoon tomato paste
1.5 tbsp brown sugar
2 tbsp light soy sauce
1 tbsp vegan worcestershire sauce
1 tsp smoked paprika
1/2 tsp cayenne pepper
1 tbsp balsamic vinegar
1/2 tsp onion granules
Pinch smoked salt (optional)
Serve with
6-8 mini tortillas
Handful pickled onions/red cabbage
3 tbsp vegan mayo
12 pickled jalapeño slices
🔥 Step By Step
1️⃣ Preheat that oven to 400°F. Get it nice and ready for action.
2️⃣ Drain your jackfruit and squeeze out all that liquid like it owes you money. Hands, towel, sieve — whatever gets it DRY.
3️⃣ Toss any hard seeds/roots, then shred the rest so it’s giving pulled pork vibes.
4️⃣ Drizzle with oil + BBQ seasoning and mix it up ‘til every bite is coated and ready.
5️⃣ Bake for 15 minutes, flipping halfway so nothing gets too crispy on one side.
6️⃣ Sauce time 🔥 Combine everything in a saucepan and whisk over medium heat ‘til it reduces and gets glossy. Let it simmer 5–10 minutes so the flavors lock in.
7️⃣ Add that baked jackfruit into the sauce, mix it through, taste, tweak, make it yours.
8️⃣ Toast your tortillas, load ‘em up with that saucy jackfruit, hit it with pickled onions or cabbage, a dollop of mayo, and finish with jalapeño heat 🌶️
