What You’ll Need 🌶️

1 tablespoon olive oil or avocado oil
1/2 large yellow onion, diced
1 red bell pepper, seeded and diced
4 garlic cloves, minced
1 lb ground turkey
1 small zucchini, shredded (½ cup)
1/4 cup chopped cilantro
2 tablespoons Cholula chipotle taco seasoning
1 tablespoon fresh lime juice
Kosher salt and black pepper, to taste
2 14.5 oz cans fire roasted tomatoes
4 oz diced green chiles
1 cup cooked brown rice or white rice
1 cup shredded cheddar cheese, divided

Optional toppings: cilantro, green onion, diced tomatoes, radish, avocado, jalapeño slices, pickled red onions, queso fresco

1️⃣ Heat things up
Drizzle oil into a large skillet over medium-high heat. Toss in onion + red pepper. Cook ~5 mins until soft and vibey. Add garlic, stir 1 min till fragrant.

2️⃣ Bring in the protein
Add ground turkey. Break it up like you mean it. Cook ~5 mins until browned and ready for the spotlight.

3️⃣ Green light, flavor boost
Stir in shredded zucchini, cilantro, taco seasoning, lime juice, salt + pepper. Cook 2 mins—let everything get cozy.

4️⃣ Load it up
Add tomatoes, green chiles, cooked rice, and ½ cup shredded cheese. Stir till melty magic happens. Top with the remaining cheese (don’t be shy).

5️⃣ Broiler = glow-up
Hit the broiler. 2–3 mins till the cheese is bubbling + lightly golden. Keep eyes on it—this is not a trust fall.

6️⃣ Finish strong
Pull it out, load with your favorite toppings, and serve with warm tortillas or tortilla chips.
