Anyone still sleeping on veggie tacos clearly hasn’t met these crispy, spice-loaded cauliflower beauties. We’re talking roasted florets with golden edges, layered with bold seasoning, cooled down with creamy cilantro yogurt, all wrapped in warm tortillas and finished with that zesty verde drip.

What You’ll Need 🌶️✨
A dozen flour or corn tortillas
Large cauliflower broken up into small florets
Sliced green chillis
Sliced pickled red onions
Chilli crunch
Salsa Verde to drizzle
For the coriander yoghurt
Generous handful of fresh coriander
150g Greek yoghurt (full fat for creaminess)
Squeeze of fresh lime juice
Salt & pepper to season
For the cauliflower seasoning
1 tsp paprika
1 tsp garlic granules
½ tsp cayenne pepper
1 tsp cumin
2 tbsp sriracha / hot sauce of choice
Masa Crunch
🌶️ Step By Step
1️⃣ Fire up the oven.
Preheat to 200°C (about 400°F).
👉 Hot oven = crispy edges, no soggy vibes.
2️⃣ Season the cauli.
Toss cauliflower florets with olive oil, salt, paprika, cumin, cayenne, garlic granules, and hot sauce.
👉 Get messy. Every piece should be coated like it means it.
3️⃣ Add the crunch.
Mix in that masa crunch.
👉 This is your texture play—crispy, golden, taco shop energy.
4️⃣ Roast to glory.
Spread on a tray, no crowding. Roast ~20 minutes, shake halfway.
👉 You’re chasing golden edges + crispy bits.
5️⃣ Sauce it up.
While that’s roasting, blitz your coriander yogurt.
👉 Want it louder? More cilantro. More lime. Make it pop.
6️⃣ Warm the tortillas.
Dry pan, 1–2 minutes per side.
👉 Soft, steamy, ready to fold—not crack.
7️⃣ Build the taco.
Layer it up:
Coriander yogurt base
Crispy cauliflower
Your favorite garnishes
Finish with a drizzle of Monterey Verde sauce.
