Recipe By: @oh_my_foodness

Fun Fact: Skirt steak has long muscle fibers, so slicing across the grain makes a noticeable difference in tenderness.

What You’ll Need

Steak + Marinade
  1. 1 whole skirt steak

  2. 1/2 cup soy sauce

  3. Juice of 1 large orange

  4. 1/4 cup olive oil

  5. 3–4 cloves garlic, minced

  6. 1/4 cup chopped cilantro

  7. 2 tbsp brown sugar or maple syrup

  8. 1 tsp cayenne pepper, or to taste

  9. 2 tsp smoked paprika

  10. 2 tsp ground cumin

  11. 1 tsp dried oregano

  12. 1 tsp black pepper

Step By Step

1️⃣ Marinate The Steak
  1. Combine the skirt steak with all of the marinade ingredients. Cover and refrigerate for up to 24 hours.

2️⃣ Get The Grill Hot
  1. Heat the grill until it’s properly hot. Remove the steak from the marinade and place it directly on the grill.

3️⃣ Grill It
  1. Cook for about 5–7 minutes per side for medium doneness.

4️⃣ Let It Rest
  1. Take the steak off the grill and let it rest for another 5–7 minutes before slicing.

5️⃣ Cut Against The Grain
  1. Find the direction of the muscle fibers and slice across them, not alongside them. This is the move that keeps every bite tender.
