Pesto Glazed Chicken Tacos w/ Basil Whipped Ricotta & Fresh Tomato Topping

What You’ll Need 🌶️✨
For the chicken:
2 Chicken breast, cubed
1.5-2 Tbsp Pesto
Heavy Pinch of salt, garlic powder and oregano
Glaze:
Pesto, chili onion crunch, honey
For the topping:
Chopped Tomatoes, Onion, Basil, splash of lemon juice or you can use a little olive oil instead
Pinch of garlic powder
Salt and pepper to taste
Extras:
Tortillas of choice- flour or corn both work!
Balsamic glaze for topping
Basil whipped ricotta (details below)
🔥 Step By Step
1️⃣ Marinate The Main Character
In a bowl, combine your cubed chicken, pesto, and spices. Toss until every piece is coated in that herby goodness. If your chicken looks a little underdressed, add an extra spoonful of pesto.
2️⃣ Crisp It Up
Air fry at 400°F for 10 minutes. Check the internal temperature and make sure it reaches 165°F before moving on.
3️⃣ Create The Sticky-Sweet Magic
In a skillet over low heat, combine a little pesto, honey, and chili onion crunch. Stir until everything melts together into a glossy glaze.
4️⃣ Sauce The Chicken
Add the cooked chicken to the skillet and toss until every bite is coated in that sweet, spicy, pesto-packed goodness.
5️⃣ Whip Up The Ricotta Cloud
Blend ricotta with garlic powder, a pinch of dried oregano, a handful of fresh basil, and a drizzle of olive oil (optional). Blend until smooth, creamy, and irresistibly fluffy.
6️⃣ Warm The Tortillas
Give your tortillas a quick warm-up so they're soft, pliable, and ready for taco duty.
7️⃣ Build & Devour
Spread a generous layer of basil whipped ricotta onto each tortilla. Top with the glazed chicken, fresh tomato topping, and a drizzle of balsamic glaze.
