Hot Honey BBQ Chicken Quesadillas

What You’ll Need
For The Chicken
3–4 chicken thighs
1–2 tbsp olive oil
1/2 tsp each salt, cayenne, and oregano
1 tsp each cumin, paprika, and garlic powder
1 tbsp hot honey
BBQ sauce*
For The Quesadillas
Large flour tortillas
1 cup shredded cheddar cheese
Sliced jalapeños
Hot honey, for assembly
BBQ sauce, for assembly
Optional Garnishes
Sour cream
Hot sauce
Hot honey
BBQ sauce

Step By Step
1️⃣ Season The Chicken
Coat the chicken thighs with olive oil, salt, cayenne, oregano, cumin, paprika, and garlic powder.
2️⃣ Get It Golden
Add olive oil to a pan and cook the chicken for about 7–8 minutes, flipping halfway through. Cover with a lid so the steam helps cook the chicken through. Once the chicken is golden and cooked, add the hot honey and BBQ sauce.
3️⃣ Rest + Chop
Transfer the chicken to a cutting board and let it rest for 10 minutes. Chop into small pieces.
4️⃣ Build The Quesadilla
Turn the heat to medium-low. Add a large flour tortilla to the same pan you cooked the chicken in. Layer on chopped chicken, shredded cheddar, hot honey, BBQ sauce, and jalapeños. Fold the tortilla over.
5️⃣ Crisp It Up
Cook until the quesadilla is crispy on both sides.
6️⃣ Bring The Heat
Finish with sour cream, hot sauce, more hot honey, BBQ sauce, jalapeños—or all of the above.
