What You’ll Need 🌶️✨
For the tacos:
2 chicken breasts, cubed & trimmed
2 tbsp olive oil
1/2 lime, juiced
2 tbsp honey
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp oregano
1/2 tsp sea salt
cracked black pepper, to taste
6 corn tortillas, warmed
For the salsa topping:
1/2 cup pineapple, cubed into small pieces
1 small Pablano pepper, seeded and diced
1/2 small red onion, finely diced
1 small tomato, chopped
1 small avocado, cubed
1/2 cup cilantro, chopped
1/2 orange, juiced
sprinkle of sea salt to taste
🔥 Step By Step
1️⃣ Marinate The Chicken
In a large bowl, whisk together the olive oil, seasonings, honey, and lime juice until smooth.
Add the cubed chicken and toss until every piece is coated in that sweet, citrusy marinade.
2️⃣ Cook The Chicken
Heat a skillet over medium-high heat.
Add the chicken and cook for 2-3 minutes per side, or until golden on the outside and fully cooked through.
3️⃣ Make The Pineapple Salsa
In a bowl, combine the chopped pineapple, poblano, red onion, tomato, avocado, and cilantro.
Squeeze in the juice from ½ orange, toss everything together, and finish with a sprinkle of sea salt to taste.
4️⃣ Warm The Tortillas
Heat the corn tortillas directly over a burner or in a dry skillet until warm and lightly charred around the edges.
5️⃣ Build The Tacos
Pile the honey lime chicken onto each tortilla, then top generously with the pineapple salsa.
