What You’ll Need 🌶️

The Steaks
2 lb skirt steak (butterflied thin)
2 tbsp olive oil
2 tbsp lime juice
2½ tbsp Spanglish Asadero Fajita Seasoning
1½ cups sliced bell peppers
1 cup sliced onion
1 jalapeño, sliced (optional)
6–8 oz Oaxaca or pepper jack, sliced thin
Toothpicks or twine

Chipotle Lime Crema
¾ cup crema or sour cream
1 chipotle pepper + 1 tbsp adobo
Zest + juice of 1 lime
1 small garlic clove
1½ tsp honey or agave
½ tsp Spanglish Asadero All Purpose Rub
Salt to taste

Blend smooth.

Elote Corn
2 cups grilled corn
1½ tbsp mayo or crema
1½ tbsp lime juice
¼ cup cotija or feta
1 tsp Spanglish Asadero Elite Seasoning
1 tbsp chipotle lime crema
Salt to taste

Guacamole
3 ripe avocados
2 tbsp lime juice
½ tsp salt
¼ cup diced red onion
¼ cup cilantro
1 tsp Spanglish Asadero All Purpose Rub

🔥 Step By Step

1️⃣ Marinate The Steak
Hit the steak with olive oil, fresh lime juice, and plenty of Fajita Seasoning.

Let it soak up all that smoky-spicy magic for 1–4 hours while you dream about taco greatness.

2️⃣ Roll Those Pinwheels
Sauté the peppers, onion, and jalapeño until softened with a little char around the edges.

Lay the steak flat, pile on sliced cheese and the veggies, then roll it up tight against the grain like the beautiful taco tornado it was born to become. Secure and slice into pinwheels.

3️⃣ Make The Crema
Blend the chipotle lime crema ingredients until smooth, creamy, and dangerously drizzleable.

Throw it in the fridge and try not to eat it with chips before dinner.

4️⃣ Build The Elote
Mix the corn with mayo or crema, lime juice, cotija, Elote Seasoning, and a spoonful of that chipotle crema.

5️⃣ Smash The Guac
Mash the avocados with lime, salt, onion, cilantro, and All Purpose Rub until chunky, creamy perfection happens.

No sad guac allowed at this taco party.

6️⃣ Grill + Plate
Grill the pinwheels hot and fast, then move them to indirect heat for about 30 minutes until the steak hits 125°F–130°F inside.

Plate with a mountain of guac, drizzle over the chipotle lime crema, spoon that elote everywhere, then finish with cilantro and lime wedges like the taco royalty you are.
