What You’ll Need 🌶️✨
1/2 leg of lamb
2 large onions
1 leek
1 stalk of celery
1 head of garlic
1 bunch of thyme
10 peppercorns
1/2 bottle brut cider
1 Quart beef stock
Fresh corn tortillas (or flour/flatbread)
Toppings:
Greek yogurt
fresh mint
1 lemon (zest and juice)
2 Granny Smith apples
Cheese: São Jorge (alternatives: matured Cheddar or Pecorino Romano)
🔥How To Make The Magic
✦ THE LAMB (Low + Slow Magic)
1️⃣ Salt that lamb leg 🧂 and sear it hard in a hot pan—both sides, golden brown, no shortcuts. Pull it out and let it chill.
2️⃣ Same pan = flavor city. Toss in onions 🧅 and caramelize for 7–8 mins until deep, sweet, and golden.
3️⃣ Add leek + celery 🌿 and cook until soft + translucent (about 5–10 mins).
4️⃣ Drop in thyme, garlic 🧄, and peppercorns. Deglaze with cider 🍎—scrape up all those crispy bits (that’s the good stuff).
5️⃣ Lamb goes back in. Add beef stock 🥩 and braise low + slow at 140°C (285°F) for 3 hours. Go live your life.
6️⃣ Pull it out and let it rest for 20 mins—patience = juicy payoff.
7️⃣ Remove lamb from the liquid and set aside, covered.
8️⃣ Strain the veggies, then crank the heat 🔥 and reduce that liquid until it’s thick, glossy, saucey perfection.
9️⃣ Shred that lamb off the bone 🦴, pour the sauce over, mix it up, and taste. Adjust seasoning like a boss.
✦ THE FRESH + CREAMY BALANCE
🌿 Mint Sauce:
Greek yogurt + chopped mint + lemon zest 🍋 = cool, tangy magic.
🍏 Apple:
Julienne last minute and toss with lemon juice so it stays crisp + pretty.
