What You’ll Need
The Steak
2½–3 lb flank steak
1 tbsp olive oil, for searing
The Citrus + Marinade
Juice of 2 large oranges
Juice of 3 limes
¼ cup low-sodium soy sauce
1 tbsp rice wine vinegar
¾ cup beef broth
The Flavor Crew
5 cloves garlic, minced
½ yellow onion, chopped
½ cup fresh cilantro, chopped
2 tsp ground cumin
2 tsp chili powder
1 tsp smoked or regular paprika
1 tsp dried oregano
1 tsp onion powder
½ tsp black pepper
1–2 chipotle peppers in adobo, finely chopped
1 tbsp adobo sauce
Step By Step
1️⃣ Give The Steak Some Color
Heat the olive oil in a hot pan and sear the flank steak until browned on each side. You’re not cooking it through here—just building flavor before the crockpot takes over.
2️⃣ Load The Crockpot
Cut the steak into pieces and add it to the crockpot with the orange juice, lime juice, soy sauce, vinegar, broth, garlic, onion, cilantro, spices, chipotle peppers, and adobo sauce.
3️⃣ Set It & Forget It
Cook for 6–7 hours on LOW or 3–4 hours on HIGH, until the beef is tender.
4️⃣ Make It Work All Week
Serve it taco-style tonight, then stash the leftovers. Tomorrow it becomes a rice bowl. After that? Quesadillas, nachos, breakfast tacos—you get the idea. Future you is already grateful.
