What You’ll Need
Chipotle Shrimp
1 lb large 16–20 count shrimp, peeled, deveined and tails removed
1/4 cup olive oil
1/2 tsp cumin
1/2 tsp kosher salt
1/2 tsp paprika
1/2 tsp smoked paprika
1/2 tsp chipotle powder
2 garlic cloves, crushed
Tortillas of choice, for serving
Mango Salsa
1 ripe mango, chopped
1 Fresno chile, chopped
1/4 red onion, finely chopped
1 tbsp chopped cilantro
Juice of 1 lime
1/4 tsp kosher salt
Avocado Crema
1 avocado
2 garlic cloves, crushed
1 tbsp cilantro
1/4 tsp cumin
Juice of 1 lime
1/2 tsp kosher salt
1/4 cup sour cream
Step By Step
1️⃣ Prep The Shrimp
Defrost and rinse the shrimp if needed. Remove the tails, butterfly the shrimp and pat them very dry.
2️⃣ Bring The Smoke
Toss the shrimp with olive oil, smoked paprika, paprika, cumin, chipotle powder, salt and crushed garlic. Mix well and let the shrimp marinate while you make the salsa and crema.
3️⃣ Make The Mango Salsa
Combine the chopped mango, Fresno chile, cilantro and red onion. Add the lime juice and salt, then toss everything together.
4️⃣ Blend The Avocado Crema
Add the avocado, garlic, cilantro, cumin, lime juice and salt to a food processor and blend until smooth. Stir in the sour cream afterward.
Taco Tuesday Tip: Don’t blend the sour cream into the crema. Stir it in by hand so the sauce stays thick instead of turning watery.
5️⃣ Sear The Shrimp
Heat a skillet over medium-high heat. Sear the shrimp for about 1–2 minutes per side, depending on their size, until just cooked through and lightly charred.
6️⃣ Char + Assemble
Char the tortillas directly over a flame or in a hot dry skillet. Load them up with chipotle shrimp, mango salsa and avocado crema.
