If there’s one universal law of backyard BBQ season, it’s this: eventually somebody walks through the party carrying a bubbling casserole dish like they just entered the flavor hall of fame. 🇺🇸🔥

Today’s drop? Pure taco-night comfort chaos.

🌶️🧀 This cheesy chile bake comes loaded with savory beef, roasted chile peppers, crispy golden edges, and enough melty cheese to make the paper plates fold under pressure.

It’s giving cookout energy. Potluck legend status. “Who made this?” repeated at least six times before sunset.

Honestly? This thing belongs next to cold beers, smoky ribs, and somebody accidentally burning the hot dogs while talking too long.

Chile Relleno Casserole

🌶️ 🇲🇽 Fun Fact: Chile Rellenos date back to Puebla, Mexico, where roasted peppers stuffed with cheese became one of the country’s most iconic comfort-food cravings.

What You’ll Need 🌶️✨

1 pound lean ground beef
1 medium onion, chopped
2 (4 ounce) cans whole green chile peppers, drained
1 cup shredded Cheddar cheese, divided
1 cup shredded Monterrey Jack cheese, divided
4 large eggs
¼ cup all-purpose flour
1 ½ cups milk
salt and pepper to taste
1 can red enchilada sauce

🔥 Step By Step

1️⃣ Gather your ingredients and crank the oven to 350°F. Time to turn the kitchen into a bubbling, cheesy flavor factory. 🔥🧀

2️⃣ Throw the ground beef and onions into a large skillet over medium-high heat. Cook until browned and irresistible, about 5 to 7 minutes, then drain off the extra grease before things get too wild.

3️⃣ Layer one can of chile peppers across the bottom of a 7x11-inch baking dish. Hit it with half the cheese, pile on the beef mixture, then shower everything with the remaining cheese. Finish with the second layer of chile peppers because restraint has officially left the chat. 🌶️

4️⃣ In a bowl, whisk together the eggs, flour, and milk until smooth and silky. Pour the mixture all over the casserole, then season with salt and pepper to taste.

5️⃣ Bake for 45 to 50 minutes until golden, puffed, and smelling like the neighborhood’s best potluck. Let it cool slightly before diving in with hot sauce nearby and zero patience. 🌮🔥
