1/2 red onion, diced
1 red bell pepper, diced
1 jalapeño, minced
1 cup dry long-grain white rice
2 tbls chili powder
1 tsp garlic powder
1 tsp cumin
1/2 tsp oregano
1/2 tsp sea salt
1 cup corn kernels, frozen
1 (15oz) can black beans, drained and rinsed
5-6 cups cooked chicken, shredded
3 1/2 cups chicken broth
1 tbls olive oil
3 tbls tomato paste
2 cups shredded Cheddar or Monterey Jack
Chopped cilantro for garnish

🔥 Step By Step

1️⃣ Preheat & Set the Stage
Crank the oven to 400°F. Grab your 9x13” dish… this is where the magic lives.
