What You’ll Need 🌶️✨
2 heads of corn
1/2 red onion diced
3-4 tomatoes diced
1 jalapeno/ chilli deseeded and diced
juice of half a lime
big handful fresh chopped coriander
Salt & Pepper, to taste

1️⃣ Char The Corn Like You Mean It
Brush the corn with oil, season generously with salt, then crank the heat way up and blister the life out of it. We want smoky edges, deep color, and full taco-truck energy. 🌽🔥

Slice the kernels off the cob straight into a bowl, squeeze over fresh lime juice, season with salt + pepper, then toss everything together until bright, smoky, and dangerously snackable. 🍋🌮
