This Fajita Sizzle Deserves Surround Sound 🌮
🌮🔥 Happy Taco Tuesday, Fam!
We’re basically cartwheeling into this week knowing Memorial Day Weekend is sitting right around the corner. Backyard speakers? Ice-cold margaritas? Grill smoke floating through the neighborhood? Yeah… summer is officially stretching awake. ☀️🍹
Stay tuned because we’re dropping the ultimate MDW backyard BBQ lineup later this week, and trust us, your grill is about to earn overtime pay. 🔥🌭
But first? Fajita night.
🌮 Smoky skillet chicken fajitas loaded with charred peppers, juicy citrus-marinated chicken, and sizzling Tex-Mex energy. The kind of weeknight dinner that somehow disappears faster than the tortilla basket.
Best served with warm tortillas, extra lime, and spicy margaritas within arm’s reach. 🍹✨

What You’ll Need 🌶️✨
MARINADE:
2 lbs chicken breast or thighs, sliced
1/4 cup avocado oil
1 tbsp garlic powder
1/2 tbsp onion powder
2 tsp chili powder
1 tsp paprika
1 tsp cumin
1/2 tsp black pepper
Salt to taste
Juice of half orange (about ¼ cup)
Juice of 1 lime
SKILLET:
2 tbsp avocado oil (for searing)
1 yellow onion, sliced
1/2 red onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 fajita Cholula seasoning packet
1/2 cup fresh chopped cilantro + diced white onion (I just bought the mix from the store)
🔥 Step By Step
1️⃣ Whisk together all the marinade goodness, toss in the sliced chicken, and let it soak up the flavor fiesta for 30 minutes to 1 hour. Running late? Same. Even 15 minutes still brings serious sizzle energy. 🌶️🍋
2️⃣ Heat oil in a big cast iron skillet over medium-high heat. Throw in the marinated chicken and let it get golden, smoky, and irresistible. Cook until almost done, then pull it out and set aside. 🔥🍗
3️⃣ In that same skillet, toss in the onions with a little salt + pepper so they soften and get all sweet and jammy. Add the bell peppers, hit everything with fajita seasoning, and cook until tender with just enough char. 🌈🫑
4️⃣ Slide the chicken back into the skillet, toss in chopped cilantro and diced onion, then let the whole pan party together for 2 to 3 more minutes until everything smells like your favorite Tex-Mex spot. 🌮✨
5️⃣ Load up tortillas, squeeze over lime, and prepare for absolutely zero leftovers. Save us a plate if your crew doesn’t inhale it first. 🍹🔥
