Anaheim Tacos w/ Carne Asada

What You’ll Need 🌶️

INGREDIENTS
*Makes about 8 tacos

ANAHEIM PEPPERS
4 Anaheim peppers
1 TBSP neutral oil
1/2 tsp kosher salt
1 1/2 C shredded quesillo (Oaxacan cheese)

CARNE ASADA
1 lb skirt or flap steak
Kosher salt

SALSA (Orange Sauce)
Garlic
Arbol peppers
Lime
Mexican oregano
White onion
Kosher salt
Chicken bouillon powder
Roma tomatoes
Sesame seeds
Canola oil

🔥 Step By Step

🌮🔥 LET’S SAUCE THIS UP, FAM 🔥🌮

1️⃣ BROIL MODE: CHAR = FLAVOR 🔥
Throw onions + tomatoes cut-side down on a foil-lined tray and broil 5–7 inches from the top until soft, blistered, and lightly charred (about 10 minutes). ➡️ Straight into the blender.

2️⃣ LOW & SLOW GARLIC GLOW-UP 🧄
Heat oil over medium-low, add garlic cloves, and let them slowly turn golden and soft (about 10 minutes). ⚠️ If they start browning too fast, drop the heat.

3️⃣ PEPPER POP-OFF 🌶️🔥
Add peppers when the garlic is almost done and cook just until they darken and smell incredible. 🚨 Don’t burn them or they’ll turn bitter. ➡️ Add garlic and peppers to the blender.

4️⃣ SESAME MAGIC 🥄
Turn off the heat, add sesame seeds to the hot oil, and let them steep for a few minutes as it cools slightly.

5️⃣ BLEND THE DREAM
Add lime juice, water, the sesame oil mix, chicken bouillon, salt, and oregano to the blender. Blend until smooth, creamy, and ready to steal the taco spotlight. 🔥

🌮🔥 TACO BUILD INCOMING, FAM 🔥🌮

1️⃣ CHAR GAME STRONG 🌶️🔥
Hit those Anaheim peppers in a hot, oiled pan until blistered and soft.
➡️ Into a bowl, cover, let ‘em steam 10–15 min.
Peel, slice lengthwise, ditch the seeds, flatten ‘em out like taco royalty.

2️⃣ GRILL LIKE YOU MEAN IT 🥩🔥
Salt that steak like you’ve got confidence.
Throw it over hot charcoal and get that deep, smoky char.
Rest 10 minutes, then chop it up nice and fine.

3️⃣ CHEESE MELT MOMENT 🧀
Drop shredded quesillo straight onto a hot cast iron or griddle.
Lay that flattened pepper right into the melt and press it in.
Yeah… we’re doing this right.

4️⃣ BUILD THE LEGEND 🌮
Warm your tortillas.
Stack with cheesy peppers, chopped carne asada, and a heavy drizzle of that Orange Sauce.
