🌶️ Fun Fact: The word “salsa” simply means “sauce” in Spanish, and Mexico alone boasts hundreds of regional variations, each guarding its own heat, texture, and signature ingredients.

What You’ll Need 🌶️🔥

1-2 tbsp Avocado oil
1¼ lbs Roma tomatoes, quartered
¾ lb red jalapeños, stemmed
¾ cup + 1 tbsp water
½ small white onion, quartered
5 cloves garlic, peeled
1 tbsp Diamond Crystal kosher salt
1 tbsp white distilled vinegar
1 tsp Knorr chicken bouillon (optional but encouraged)
¼ tsp sugar, or to taste

🔥How To Make The Magic

1️⃣ 🍅 Simmer the Base
Toss tomatoes, jalapeños, onion, and water into a pot.
Bring it to a happy simmer over medium heat. Cover and let it do its thing until the tomatoes collapse and everything turns tender and cozy. Let it cool just enough so your blender doesn’t stage a protest.

2️⃣ 🌪️ Blend & Season
Into the blender it goes. Add garlic, salt, sugar, bouillon if you’re feeling extra, and a splash of vinegar.
Blend until smooth-ish. Not baby food. Leave a few seeds and flecks for that real-deal taquería texture.

3️⃣ 🌶️ Taste & Adjust
Now wake it up. More vinegar? More salt? Adjust until it makes your taco sit up straight.
Salsa should hype the taco, not drag it down.
