Today we’re bringing a little East-meets-West taco magic to the table. The inspiration? Some of the most legendary BBQ on the planet… South Korean bulgogi. 🇰🇷🔥
Bulgogi is pure flavor wizardry. Sweet, savory, smoky beef caramelized on a hot grill, tender and juicy with garlic, soy, and sesame delivering deep, irresistible umami in every bite.
And when you tuck that sizzling beef into a warm tortilla with fresh toppings? Oh yeah… Taco Tuesday just went global. 🌎🌮

Korean Beef Bulgogi Tacos

🔥🥩Fun Fact: Korean BBQ exploded in U.S. cities in the 1990s as Korean immigrants opened tabletop grill restaurants, turning marinated bulgogi and galbi into social, sizzling dining experiences.

What You’ll Need 🌶️✨
Marinade:
450g sliced beef
4 Tbsp roasted sesame oil
3 garlic cloves
1 Tbsp fresh ginger
3 tbsp low sodium soy sauce
3 tbsp brown sugar
1 lime juiced
1 tbsp chili garlic sauce
Garnish green onion and sesame seeds
Slaw dressing:
2 limes, juiced
2 tbsp maple syrup
2 tbsp mirin
2 tbsp Sriracha
2 tbsp evoo
1 garlic clove
1/4 tsp sea salt
1/2 small purple cabbage
Taco sauce:
3 tbsp gochujang paste
1 lime juiced
1 tbsp maple syrup
Toppings:
1 bunch cilantro
Mango
🔥How To Make The Magic
1️⃣ 🥬 Slaw First, Fam!
Mix together all the slaw ingredients, then toss in the sliced cabbage and give everything a good mix. Pop it in the fridge to chill. Bonus: this slaw can be made days ahead and just gets better.
2️⃣ 🥩 Build the Bulgogi Marinade
Whisk together the marinade ingredients (minus the beef), then add your beef and coat it well. Any cut works here, even ground beef. If you’re near an Asian market, pre-sliced bulgogi beef is taco gold.
3️⃣ 🔥 Sizzle the Beef
Let the beef marinate 15 minutes, then heat up a cast iron pan until hot. Add the beef, spread it out, and let it sizzle and caramelize. Once the liquid cooks off and the edges brown, stir it, let it sit again, then stir once more. We want crispy bits, fam. Total cook time about 8–10 minutes. Finish with green onion + sesame seeds.
4️⃣ 🌶 Mix the Taco Sauce
Stir together all the taco sauce ingredients until smooth. Gochujang brings deep flavor without too much heat. If you can’t find it, a mild chili paste works just fine.
5️⃣ 🌮 Build the Taco Masterpiece
Warm two corn tortillas in a cast iron pan until soft. Then load them up:
bulgogi beef → extra green onion → cilantro → crunchy slaw → sliced mango → drizzle of taco sauce.
Boom. Sweet, spicy, crunchy, juicy taco magic.
