Today we’re building the unsung hero of taco night… the street-taco-style refried beans that show up on every great taqueria plate and somehow steal the spotlight.
Creamy, rustic beans simmered with garlic, jalapeño, and oregano, mashed with rich bean broth, then finished bubbling hot with melty cheese and a shower of bright cilantro. Simple, bold, and ridiculously good. 🫘🧀🌶️

🫘🌮🔥Fun Fact: Refried beans aren’t actually fried twice. The Spanish frijoles refritos means “well-fried beans,” traditionally mashed and cooked in lard for creamy, rich flavor.

What You’ll Need 🌶️✨🔥
Cook the Beans
1 lb mayocoba beans, (peruano)
1/2 white onion
1 bay leaf
1 head garlic, sliced end off
2 tsp kosher salt
10 cups water
Refried Beans
1 1/2 tbsp pork lard
1 1/2 tbsp avocado oil
1/2 white onion, finely diced
1 jalapeño pepper, de-seeded, finely diced
3 garlic cloves, minced
1/2 tsp dried Mexican oregano
1.5 cups bean broth, or to liking
To taste kosher salt
Top with:
Cotija cheese or Queso Fresco, crumbled
Cilantro, chopped
🔥How To Make The Magic
Cook the Beans
1️⃣ SORT & RINSE, FAM
Look through the beans and kick out any rocks or shriveled troublemakers. Give the good ones a nice rinse.
2️⃣ LOAD THE INSTANT POT
Add the beans, onion, bay leaf, garlic, salt, and water to the Instant Pot. Seal it up and cook on HIGH PRESSURE for 45 minutes.
3️⃣ LET THE MAGIC HAPPEN
Allow a 10-minute natural pressure release, then quick release the rest. Open the lid and enjoy that warm, beany aroma.
4️⃣ SAVE THE LIQUID GOLD
Discard the bay leaf, onion, and garlic. Strain the beans and save both the beans and the broth. That broth = taco night flavor fuel.
Refried Beans
5️⃣ START THE SIZZLE 🌶️
Heat a large pan over medium heat. Melt the lard, drizzle in a little oil, then add chopped onion and jalapeño. Cook until golden and smelling like a taco stand.
6️⃣ GARLIC + OREGANO TIME
Add minced garlic and dried oregano. Toast for about 1 minute until everything smells ridiculously good.
7️⃣ MASH THE BEANS
Add the cooked beans and ¼ cup of the reserved bean broth. Mash with a potato masher until creamy but still chunky. Add more broth if needed.
8️⃣ FINISH THE PARTY 🎉
Once hot and bubbly, salt to taste. Turn off the heat and shower those beans with cheese and fresh cilantro.
