We’ve got a fajita situation on our hands. The kind that starts as a craving and ends with cast iron smoke curling through the kitchen like a victory signal.

Think: juicy chicken with that deep, smoky char. Peppers blistered just right. A squeeze of lime that wakes everything up. Guac doing its creamy thing. Cheese melting like it understands the assignment. All tucked into warm tortillas that barely survive the pile-on.

Cast Iron Hatch Chile Fajitas

What You’ll Need 🌶️✨🔥

1.5 lbs chicken breasts
3 hatch chiles, sliced and deseeded
1 yellow onion, sliced
1 red bell pepper, sliced and deseeded

MARINADE
1 C orange juice
1 lime, juiced
3 cloves garlic, minced
2 tsp smoked paprika
1/4 C olive oil
1/2 tsp salt

FAJITA SEASONING
1 tsp ground cumin
1 tsp garlic powder
1/4 tsp black pepper
Salt to taste

🔥How To Make The Magic

1️⃣ MARINADE MODE
🥊 Lightly pound the chicken so it cooks evenly.
🌊 Add to a bag or bowl with the marinade.
❄️ Let it hang in the fridge for 12–24 hours… or at least 30 minutes if you’re in a hurry.

Longer soak = louder flavor.

2️⃣ SIZZLE THAT CHICKEN
🍳 Preheat your cast iron over medium.
🛢 Add a little oil.
🔥 Sear each side until golden and gorgeous.
🌡 Cook until internal temp hits 165°F.
⏳ Rest 10 minutes. Respect the juices.
🔪 Slice it up.

That skillet should be talking back to you.

3️⃣ ONION & PEPPER PARTY
Same pan. Same vibes.
🛢 Touch of oil.
🧅 Onions
🌶 Hatch chilies
🫑 Bell peppers
✨ Fajita seasoning shower.

Cook until softened with those slightly charred edges. Smoky, not soggy.

4️⃣ BUILD & DEVOUR
🔁 Add the sliced chicken back to the pan. Let it all mingle.
🥑 Avocado or guac
🧀 Shredded cheese
🍋 Lime wedges
🌶 Salsa
🤍 Sour cream

Stack it. Fold it. Bite it.
