📍 STOP #4: HILTON LOS CABOS BEACH & GOLF RESORT
The location: Los Cabos, Baja California Sur, Mexico.
The vibe: Hacienda-inspired luxury, turquoise water, swimmable beach access, and regional Mexican flavors.
The main attraction: Talavera.
Situated along the scenic corridor between Cabo San Lucas and San José del Cabo, Hilton Los Cabos combines Mexican-inspired architecture with a beautiful stretch of beachfront on the Sea of Cortez.
Think white stucco buildings, palm-lined terraces, ocean-facing balconies, sparkling pools, and some very inviting places to order a margarita.
But the real surprise?
The resort sits along one of the area's relatively rare swimmable beaches.
After our last Los Cabos stop, that's a pretty big deal.
And when the sun starts going down, we have somewhere very specific to be.
Because those tacos aren't going to order themselves.
🌮 THE MAIN EVENT: TALAVERA
Okay, Fam. We're getting fired up.
Talavera celebrates the regional flavors of Mexico, with an open kitchen, local ingredients, and a menu that takes tacos seriously.
And the lineup? Let's just say the mesquite grill is getting a workout.
Here's what we're eyeing on Talavera's published dinner menu:
Kastakan & Chorizo: Pork belly slowly cooked in its own fat, paired with spicy chorizo. Rich, savory, and not remotely shy.
Pulpo a las Brasas: Mesquite-grilled octopus with adobo, roasted pineapple, habanero, and xnipec. Smoky seafood meets sweet heat.
Sonoran Skirt Steak: Black Angus beef with spicy cucumber, pickled spring onion, and refried beans.
Rib Eye Norteño Style: Ribeye with tatemada salsa, avocado, and pickled onions.
Every taco is served individually on a house-made corn tortilla.
🌶️ The Taco Tuesday Move: Start with the grilled octopus and Kastakan & Chorizo. Then bring in the Sonoran skirt steak. Three very different tacos, one extremely worthwhile dinner plan.
Feeling ambitious? Add the queso fundido, featuring melted Mexican cheeses, roasted poblano peppers, and house-made chorizo finished tableside with mezcal flambé.
That's how you start a dinner.
Know before you order: The published menu lists individual tacos from $10 to $14 USD, with taxes included. This is resort dining, not street-taco pricing.
When to go: Talavera currently advertises dinner on select evenings. Confirm its operating schedule and current taco menu before making plans.
🍹 THE MARGARITA SITUATION
Good news. Hilton Los Cabos knows its agave.
And we have two very solid options.
First stop: Sotol.
The resort's ocean-view lounge specializes in elevated cocktails and artisanal agave spirits, making it an excellent place for a pre-dinner drink or a little sunset appreciation.
Second stop: Talavera.
Alongside its Mexican menu, the restaurant highlights an impressive collection of more than 100 agave spirits, including tequila and mezcal.
That's a lot of very interesting bottles.
If you're feeling curious, ask the bartender about a mezcal recommendation to complement the grilled octopus.
We support ambitious pairings. Just don't forget to hydrate.
🏖️ THE RESORT: MORE THAN A TACO STOP
This is where Hilton Los Cabos separates itself from some of the other properties on our trail.
You can actually plan a proper beach day.
The resort sits on a cove-protected stretch of the Sea of Cortez, where swimming is generally possible when conditions permit.
Add oceanfront pools, private cabanas, tropical gardens, tennis, an eforea Spa, and convenient access to some of Los Cabos' celebrated golf courses.
And when you're ready to take a break from tacos—which we admit sounds suspicious—there's plenty more to explore.
Leña: Wood-fired cooking beside the ocean, featuring grilled seafood, meats, and even fire-kissed octopus and tuna tacos at lunch.
Vela: Mediterranean-inspired dining with house-made pasta, seafood, and a romantic evening setting.
Mio: Sushi, ceviche, and casual poolside dining beside the family-friendly Dolphin Pool.
Enclave Beach Club: Beachside cocktails, tapas, and cabanas with dramatic Sea of Cortez views.
☀️ POOLSIDE
Pool personalities are covered here. The Serenity infinity pool is adults-only, while the main pool delivers those classic Sea of Cortez views. Families can make a splash at Dolphin Pool, complete with a water slide and Splash Zone. Book a cabana, order something citrusy, and let Cabo handle the rest.
🛏️ THE ROOM KEY
The rooms here lean into hacienda-inspired design, spacious layouts, and outdoor living.
And we're fully on board with that.
For couples: Consider a Deluxe King Oceanfront Balcony room, with a private furnished balcony overlooking the Sea of Cortez.
For families or friends: The Deluxe Ocean View Two Queen room offers two queen beds, a private balcony, and 546 square feet of space.
Worth the splurge: The AltaMar Plunge Pool Suite Oceanfront, with a private plunge pool and beautiful water views.
AltaMar accommodations also offer an elevated experience, with additional amenities and concierge services depending on the room category and booking arrangements.
The Taco Tuesday Move: If you're celebrating something special, the plunge pool suite is extremely tempting.

☀️ THE PERFECT TACO TRAIL DAY
Let's build the perfect day.
9 AM — Breakfast at Talavera. Start with Mexican breakfast favorites, fresh fruit, coffee, and house-made salsa.
10:30 AM — Beach Time. Enjoy the resort's protected cove, subject to the day's swimming conditions.
12:30 PM — Lunch at Leña. Wood-fired coastal cooking with the ocean as your backdrop.
2 PM — POOLSIDE. Serenity Pool for adults-only relaxation, or Dolphin Pool for family fun.
4 PM — Spa, Siesta, or Another Swim? That's entirely up to you.
5 PM — Drinks at Sotol. Time to find a comfortable seat and something refreshing.
Evening — TALAVERA TACO TIME. When Talavera is serving dinner, settle in for handmade tortillas, mesquite-grilled octopus, and some serious Mexican flavor.
If Talavera isn't open that evening, ask the concierge about the next available dinner service or explore the wood-fired taco options at Leña.
End the day with an oceanfront stroll and a little more time beneath the Baja sky.
That sounds like a pretty good Tuesday to us.
🔥 WHO SHOULD BOOK THIS RESORT?
Book it for: Couples, families, beach lovers, golfers, and food-focused travelers who want ocean swimming, beautiful pools, and plenty of dining variety in one resort.
Think twice if: You're looking for an all-inclusive package with unlimited food and drinks, inexpensive taco meals, or a lively downtown Cabo San Lucas location within walking distance.
🌮 THE TACO TUESDAY TAKE
Come for the tacos. Stay for the beach. Make room for the octopus.
Hilton Los Cabos Beach & Golf Resort delivers a slightly different kind of Taco Trail experience.
Here, it's not about an elaborate nine-course production or a quick walk-up taco window.
It's about classic resort relaxation, coastal flavors, and an evening built around good Mexican cooking.
Talavera's menu gives us plenty to get excited about, especially the mesquite-grilled octopus and Sonoran steak.
But the resort's real advantage is the combination of oceanfront pools and a beach where you can actually get in the water when conditions allow.
Would we spend the afternoon swimming before getting dressed for taco night?
Absolutely.
Would we ask for extra salsa?
Is that even a question?
🌮 NEXT STOP: PUERTO VALLARTA!
We're heading south along Mexico's Pacific coast.
Stop #5 takes us to Hilton Vallarta Riviera All-Inclusive Resort, where Baja-style fish tacos, shrimp-filled tacos gobernador, and oceanfront views are next on our agenda.
Fresh seafood. Cold margs. Another spectacular stretch of coastline.
We like where this is going.
Killer Tacos. Perfect Sunsets.
See you on the trail!
