📍 STOP #3: CONRAD PUNTA DE MITA, MEXICO
The location: Punta de Mita, Riviera Nayarit, Mexico.
The vibe: Low-rise coastal luxury, long sandy beaches, palm-lined pools, and Mexican flavors worth slowing down for.
The main attraction: Paleta.
This is a different Pacific story from the dramatic cliffs of Los Cabos.
Conrad Punta de Mita unfolds beside a wide, sandy coastline, with landscaped gardens, open-air dining, ocean-view terraces, and plenty of room to find your own pace.
You can spend the day bouncing between the pool and the beach.
Or, in our case, between the pool and the taco menu.
An important detail: This is not an all-inclusive resort. Meals and drinks are generally billed separately.
🌮 THE MAIN EVENT: PALETA
At Paleta, the taco run requires very little planning.
It's the resort's relaxed poolside lunch spot, and its menu goes well beyond the obligatory burger and salad.
Here's the taco lineup we're eyeing:
Baja-Style Fish: Catch of the day, cabbage, avocado, Mexican salsa, and chipotle mayo.
Baja-Style Shrimp: A seafood variation with the same crunchy, creamy supporting cast.
Fried Octopus & Shrimp: Seafood with pumpkin-seed salsa macha, avocado mousse, and pickled onion.
Skirt Steak: Beef, chorizo, pinto beans, grilled onion, and cabbage. Absolutely not a timid taco.
Pastor-Style Mushroom: Pineapple, pickled onion, and creamy avocado.
Pork Belly: Rich pork with Mexican salsa and pickled onion.
There's a Baja-style cauliflower option for the plant-based crowd, too.
🌶️ The Taco Tuesday Move: Start with the Baja-style shrimp for that seaside mood. Follow it with the fried octopus and shrimp if you want something adventurous, or the mushroom pastor if you're keeping it meatless.
When to go: Paleta lists lunch from 11 AM–7 PM. Confirm the menu and hours with the resort when you visit.
🍹 THE MARGARITA SITUATION
We have two plans here.
Plan A: Stay by the water, order something citrusy at Paleta or the adults-only Aura Pool Bar, and let the afternoon unfold.
Plan B: Graduate to the resort's Agave Studio, where guided tastings explore a collection of more than 200 bottles of tequila, mezcal, raicilla, and sotol.
There's also Tuki, the art-filled lobby lounge for cocktails and a more dressed-up evening moment.
The move: Save the agave tasting for another day. Poolside tacos and a cold drink already make a pretty convincing afternoon.
And yes, we're still calling this research.
🏖️ THE RESORT: MORE THAN A TACO STOP
Conrad Punta de Mita delivers a quieter, spread-out version of luxury.
There's a long sandy beach, lush grounds, a spa with a traditional Mexican temazcal, tennis, nearby golf, and a kids' club for guests traveling with little ones.
The dining goes far beyond Paleta.
Codex: Modern Mexican cuisine in an intimate, open-air setting, with a tasting-menu approach for a special dinner.
Mezquite: A beachfront grill, where seafood and steaks meet the smoky character of wood-fired cooking.
Árbol: Mexican breakfast favorites, from chilaquiles to made-to-order tacos. Yes, tacos for breakfast count.
The honest beach note: It's a beautiful stretch of Pacific coastline, but ocean conditions change. Ask the beach team about swimming and water activities rather than assuming every day is calm.
Our advice? Book this one for a balanced beach-and-pool vacation with food as a major part of the experience.
☀️ POOLSIDE
Three pools, three very different moods. Claim a lounger by the ocean-facing infinity pool, escape to the adults-only Aura pool, or follow the family crowd toward the waterslide and splash pad.
Add temperature-controlled water, Pacific views, and Paleta tacos steps away. Honestly, that's a pretty convincing Taco Tuesday vacation itinerary.
🛏️ THE ROOM KEY
For couples: Consider an Ocean View King room with a private balcony. A sunrise coffee and a sunset ocean view are a strong argument for staying put.
For families or friends: An Ocean View Two Queen room offers flexibility while keeping those coastal views in the picture.
Worth the splurge: A Beachfront Signature Suite with Plunge Pool brings a spacious private terrace, your own plunge pool, and personal concierge service.
One useful distinction from Stop #2: Private plunge pools are available in select suites here, not every guestroom.
☀️ THE PERFECT TACO TRAIL DAY
Here's our very serious agenda for a wonderfully unserious day.
9 AM — Breakfast at Árbol. Coffee, chilaquiles, and absolutely no reason to rush.
11 AM — Find Your Pool. Adults-only quiet, a family waterslide, or the main infinity pool. Choose your own adventure.
12:30 PM — The Paleta Taco Run. Start with seafood. Explore the rest of the menu from there.
2 PM — Beach Time. Walk the sand, relax in a cabana, or ask about the day's water activities.
4 PM — Agave or Siesta? Your vacation, your rules.
Evening — Dinner at Mezquite. Wood-fired cooking by the beach. Or reserve Codex if you're feeling especially culinary.
Finish with a Pacific sunset.
No complicated itinerary required.
🔥 WHO SHOULD BOOK THIS RESORT?
Book it for: Couples, families, food lovers, and anyone who wants a laid-back luxury setting with a genuine choice between quiet pool time and kid-friendly fun.
Think twice if: You're looking for unlimited food and drinks included in the rate, budget-priced tacos, or a hotel within easy walking distance of lots of independent neighborhood restaurants.
The location encourages you to settle into the resort, and the à la carte dining costs deserve a spot in your vacation budget.
🌮 THE TACO TUESDAY TAKE
The biggest luxury here might be having the tacos come to your pool day.
Conrad Punta de Mita makes a strong case for the art of slowing down. Paleta's menu gives us a taco lineup worth exploring, from Baja-style seafood to skirt steak and pastor-style mushrooms, while the rest of the resort offers plenty of room to stretch out.
Would we choose the shrimp tacos?
Absolutely.
Would we make time for Codex and a guided agave tasting, too?
You know us.
But the real move is simple: Find your favorite pool, claim your spot, and don't make too many plans.
🌮 NEXT STOP: LOS CABOS!
We're heading back to Baja California Sur for Hilton Los Cabos Beach & Golf Resort, where the next taco chapter has some serious oceanfront potential.
Same mission. Different resort.
Killer Tacos. Perfect Sunsets.
See you on the trail!
