📍 STOP #1: HILTON CANCÚN, MEXICO
The location: Cancún, Quintana Roo, Mexico.
The vibe: Beachfront mornings, poolside afternoons, tacos whenever possible.
The main attraction: Maxal Taqueria.
Set along a quieter stretch of the Mayan coastline, Hilton Cancún trades the bustle of the Hotel Zone for a mangrove-backed, all-inclusive escape.
Think modern rooms, ocean views, sprawling pools, plenty of family-friendly action, and 12 food-and-drink venues.
But let's not get distracted by the infinity pool just yet.
We came for the tacos.
🌮 THE MAIN EVENT: MAXAL TAQUERIA
Here's where things get interesting.
Instead of making you commit to a full sit-down lunch, Hilton Cancún has Maxal Taqueria, a walk-up taco window serving a rotating lineup of Mexican favorites.
No elaborate lunch itinerary required. Just show up hungry.
Al Pastor: Marinated pork with grilled pineapple. Sweet, savory, and a classic place to start.
Suadero: Beef for anyone who appreciates a good, rich taco filling.
Carnitas: Pork, the kind of taco that deserves a proper salsa situation.
Camarón: Shrimp for the seafood crowd.
Setas al Pibil: Mayan-style mushrooms. An excellent reason not to skip the meatless option.
There's also chorizo, breaded chicken, and a vegetarian combination featuring sweet potato, chickpeas, and potato.
And then comes the supporting cast: Salsa verde, salsa molcajete, salsa mexicana, pickled radish, roasted spring onions, and guacamole.
🌶️ The Taco Tuesday Move: Start with al pastor, suadero, and setas al pibil. Sample the salsas, pick your favorite, and go back for round two.
When to go: Maxal Taqueria currently lists hours of 11 AM–6 PM. The selection rotates, so check what's being served during your stay.
🍹 THE MARGARITA SITUATION
Tacos without a good drink situation?
Not on this trail.
Hilton Cancún has poolside bars, a lobby lounge, and a dedicated Mezcalería featuring handcrafted mezcal cocktails.
Our suggested game plan: Start with tacos at Maxal Taqueria, move to a poolside cocktail, and save the Mezcalería for later in the afternoon.
The move: Ask the bartender about the current tequila and mezcal cocktails. We're particularly interested in pairing something citrusy with the al pastor.
No need to overcomplicate a very good afternoon.
🏖️ THE RESORT: MORE THAN A TACO STOP
As much as we'd happily organize an entire vacation around tacos, the hotel still needs to deliver.
Hilton Cancún offers a pretty compelling setup.
There are infinity pools, a family water playground, kids' and teens' clubs, daytime activities, and evening entertainment.
The all-inclusive package covers meals across the included venues, drinks, and a range of resort activities.
☀️ POOLSIDE
Pool days are serious business here. Hilton Cancún pairs an infinity pool with ocean views, lively pool activities, and a family splash playground complete with slides. Grab a lounger, keep something cold close, and rotate between swimming, sunshine, and taco runs.
This is the vacation schedule we can wholeheartedly support.
🛏️ THE ROOM KEY
There are two directions we'd consider.
For couples: A Sunset View King Guestroom offers a balcony and a 430-square-foot layout. A tempting match for our Killer Tacos, Perfect Sunsets philosophy.
For families: Look at the two-queen guestrooms or larger suites, especially if extra space is going to make everyone's vacation more enjoyable.
Worth considering: An oceanfront suite if you're planning to spend meaningful time on your terrace rather than treating the room as a place to sleep between taco runs.
☀️ THE PERFECT TACO TRAIL DAY
Here's how we'd spend a day at Hilton Cancún.
9 AM — Breakfast at Vela. Coffee, breakfast, and absolutely no rushing.
11:30 AM — Taco Time. Head to Maxal Taqueria before the afternoon slips away. Start with three. Adjust as needed.
1 PM — Pool Mode. Sunshine, water, and a drink with a lime wedge.
4 PM — The Second Taco Run. Because research requires a thorough sampling strategy.
Evening — Dinner at Maxal. The resort's separate Maxal restaurant explores regional Mexican flavors in a sit-down setting. A fitting way to close the culinary loop.
And if the night still has some energy left? Find the live music.
🔥 WHO SHOULD BOOK THIS RESORT?
Book it for: Families, couples, and groups looking for a relaxed all-inclusive escape with plenty of dining variety and a genuinely convenient taco stop.
Think twice if: Your ideal vacation revolves around exploring independent neighborhood taquerías every day, walking out into Cancún's nightlife, or spending every hour swimming in the ocean.
This is a self-contained resort experience, not a substitute for a Mexican street-food adventure.
🌮 THE TACO TUESDAY TAKE
The taco window is the hook. The easygoing resort experience is the reason to stay.
Hilton Cancún gives us exactly the kind of story we want for the Taco Trail: recognizable Mexican taco varieties, a dedicated place to order them, and enough resort amenities to build an entire vacation around the experience.
We're especially interested in the al pastor, the suadero, and the pibil mushrooms.
Would we make Maxal Taqueria the first stop after unpacking?
Without hesitation.
Would we still venture off property to explore Mexico's wider taco culture?
Absolutely.
That's the beauty of the Taco Trail. There's always another taco worth chasing.
🌮 NEXT STOP: LOS CABOS!
We're heading west to Waldorf Astoria Los Cabos Pedregal, where the taco experience takes on a decidedly more luxurious personality.
Same mission. Different coastline.
Killer Tacos. Perfect Sunsets.
See you on the trail!
